The story of the Delmas family winery began three generations ago, when the family tradition began to develop. The vineyards are located in the Languedoc region, at the foothills of the Pyrennes, making it an ideal place for wine production due to the combination of the Mediterranean and Atlantic climate. In 1986, the winery decided to convert all of vineyard to organic farming, that they maintain to this day. Wine is produced by the traditional method, following the ancestors.

The Champagne is the result of an accurate choice by Benoit: this is the recipe of this great Millésime, fermenting in barrique, made by 80% Pinot Noir and 20% Chardonnay. It smells dense and creamy with a final acid taste, typical for Pinot Noir.

A pleasant lemon yellow color with highlights and a fine mousse. On the nose the wine is really fresh and lively. It exhales notes of citrus, lemon with grapefruit dominance. On the gently south-facing slopes of Mareuil above Clos des Goisses, chardonnay takes on a fleshy generosity, especially in a warm season like 2015. Jean-Paul Hébrart presents a masterfully crafted take on this, in a blanc de blancs of bright, pale straw hue that heralds its elegant freshness. A core of mirabelle plum and white peach is accented with the zest of grapefruit and lemon sherbet in an approachable and succulent style of generous spice complexity and ripe fruit persistence. The salt minerality of Mareuil upholds freshness on the finish, amplified strategically by a well-placed touch of the structure of Chouilly/Oiry.
