Marc Hébrart cultivates 15 hectares of vines in five grand cru villages. Except for two cuvées that are raised in oak vats, all cuvées are fermented in stainless steel. Hébrart seeks elegance in his wines and aims to balance the freshness of Chardonnay from the Cotes de Blancs with Pinot Noir from Mareuil.
The NV Rosé Premier Cru Brut offers a super clear and refreshing bouquet with lots of chalky Chardonnay character intermixed with subtle red berry flavors and some herbal flavors. There is a great purity and minerality here, lots of salts and chalk, as well as great purity finesse. This Champagne combines elegance with lightness and delicate fruit aromas. This is a very delicate Rosé that comes highly recommended. It is long and tension-filled, with delicate tannins that give grip, making this a perfect wine to go with food, but also extremely well as an aperitif.
Marc Hebrart stands for winemaker champagne with a lot of character. This is also evidenced by this cuvee: aromas of peach, red berries and herbs, with mineral undertones, full-bodied, juicy, mature structure, perfectly integrated sows, very vinous and fruity. This is the inaugural release of Hébrarts blanc de noirs, made from a selection of parcels in Aÿ, all planted with vines over 40 years old. Its vivid and expansive, Its outstanding, showing a sleek, elegant structure and concentrated, resonant depth of fruit. Despite its youth, its already marked by a subtle, nuanced complexity, enlivened by a vibrant chalkiness, and it finishes with superb length and finesse. It demonstrates the nobility and sophistication of the terroir, and it immediately claims a place as one of the best expressions of Aÿ available today.

Champagne made a name for itself through the wines of large negociants - producers who buy fruit from the vineyards of other growers and blend many lots together. The past several decades have seen the rise of the "Grower-Producer" in Champagne. This label belongs to producers who are growing all of the fruit for the wine they produce, keeping their own product to vinifiy rather than sell it to the larger houses. Look for the "RM" on the label, indicating that the winery is a Recoltant-Manipulant, or Grower-Producer, and not a Negociant-Manipulant (NM), or larger house. Fine wine can be made in either way, but RMs produce products that are inevitably more indicative of terrior. The Hebrart family has been making Champagne under their family name since the 1960's. The wines are complex and refined, but easy to drink and enjoy. This rose is entirely sourced from Chardonnay and Pinot Noir vineyards in Mareiul Sur Ay, a Premier Cru village in Champagne of the highest quality (many argue that the Village should be upgraded to Grand Cru status). A master of delicacy and nuance, concentration so perfectly balanced it's like it isn't there, you just can't go wrong. Mes Favorites, as the name suggests is a blend of Jean-Paul's favorite parcels of old vines, planted with sélection massale cuttings, in the "super-premier" cru of Mareuil-sur-Aÿ 1er Cru. This blend is 75% Pinot Noir and 25% Chardonnay made up of 60% 2014, 20% 2013, 20% 2012, goes through full malolactic fermentation in stainless steel and spends 2 years sur latte.
