The Gamay variety is processed by classic fermentation, not carbonic maceration, as a new Beaujolais. The wine is of low alcohol, delicate, lively and fruity. It will show its potential for up to two to three years after the harvest. It is suitable for goat cheeses, poultry and sausage delicacies.
