Among the bio certified wine producer in France, Laval started in 1971 and still produces their Champagnes following the oldest champenoise tradition. The organic cultivation preserves our lifestyle, flavours and original tastes of the terroir and allows the family to create great Champagnes. Everything depends on soil: the vineyeards health, the balance between quantity and quality, as well as the aromatic expression of the terroir. Fertilization is organic and natural, respecting the organic principles and caring of the vines need. They work the grassy land, avoiding herosion and supporting the natural animals and flowers in the surroundings, while letting the root reach deep soil. They only grow the three champenoise vines. Half of them is 30 years old, the rest more than 70. Organic cultivation is based on observation and profilactic fight. All work is conducted manually. To fight parasites they only use organic environmentally-friendly compounds. Treatments are based on alert levelsand health conditions of every single parcels. The wine follows its own path: grapes are picked manually and pressed on a traditional champenoise press. When pressing, a low dosage of SO2 (less than 30mlg/l) is added to the juice. The must rests in oak barrels and local indigenous yeasts turned it into white wine. The aging process takes 10 months. The grapes quality, the long vinification process, the low volume of the barrels allow a natural clarification of the Cuvées, without using chemical products, fining of filtration. The wine develops gradually and naturally, so that it preserves its properties. The Champagne ages from 2 to 4 years according to the Cuvée. The remuage is carried out manually on pupitres. Since 1996, after the founder's death - Georges Laval, the business has been managed by his son Vincent.

The Champagne Brut Nature Cumières by Georges Laval is 57% Chardonnay, 10% Meunier and 33% Pinot Noir, coming from old vineyards. It refines in oak barrels and rests in the bottle for three years before disgorging. The perlage is fine and rich.

The golden colour of this Champagne is intense, it smells of fruit (mainly white fruits). It is generous in the mouth, fat, strong and fruity. This Champagne Brut Nature is considered the most impostant and the best selling product.
