The small, seven-hectare winery in the heart of the Chablis appellation is led by modest and precise Jean-Claude Bessin. In the vineyards, the grapes are grown without the use of chemical fertilizers and herbicides; in the cellar, traditional wooden barrels are used very sensitively. Chablis AOC Vieilles Vignes comes from Chardonnay's 50-year-old vineyards and is refined in part in stainless steel tanks and partly in old barrels.
The result is a very elegant and fine wine with discreet aroma, with a significant mineral structure derived from limestone limestone and with a harmonious and long finish. It will be accompanied by sea and freshwater fish with butter sauce.
