The small, seven-hectare winery in the heart of the Chablis appellation is led by modest and precise Jean-Claude Bessin. In the vineyards, the grapes are grown without the use of chemical fertilizers and herbicides; in the cellar, traditional wooden barrels are used very sensitively. La Forêt is the lower part of the Mont Mains vineyard, located on the left bank of the Serein River, directly opposite the Grand Cru vineyards. It is oriented to the southeast and the slope is very steep, which allows sunshine all day. Pure Jurassic limestone adds to this Chardonnay the structure and acids and determines it for longer aging in the cellar.
